“Restore your soul by valuing your time, establishing trust, recovering the forgotten, respecting the product, feeling at home, and sharing experiences.”

Come Conciencia is a unique collaboration between the culinary, visual, and musical arts. Based on 6 values that have been gradually disappearing in modern day cuisine, Come Conciencia seeks to bring new awareness to these foundational concepts. These values are Trust, Forgotten Products and Techniques, Respect, Home, Sharing, and Time. Time is represeted by music, and the remaining five values are represented with their own unique cuisine and art.

While studying for her Masters at the Basque Culinary Center in San Sebastian, Mónica designed a 15 plate menu with chefs Gabriel Ximenes, Yhanto Nieto and Gustavo Alba, and collaborated with musician Eric Maltz and artist Annika Kappner to create a completely immersive tasting experience. This new concept of the tasting menu broke the limits of a kitchen and looked to engage all the senses to convey meaning. The whole menu tells a story based on values and emotions, the plates were designed specially to trigger these sensations in coordination with the music and art. Michelin Star Chef Roberto Ruiz compared the menu with Noma restaurant.

The music was composed to accompany a 15 course meal served at the Basque Culinary Center in San Sebastian - Donosti, Spain. It is part of a larger project, and will be released as a 12" vinyl with a book containing photographs of the dishes, recipes, and original menu artwork.
